What we’re eating on our simple menu plan this week:

+ Monday: Sausages, New Potatoes & Steamed Broccoli
+ Tuesday: Chicken Curry (freezer leftovers), Rice & Naan
+ Wednesday: Mushroom Omelets, New Potatoes & Salad
+ Thursday: Chicken Taco Bowls (Slow Cooker)
+ Friday: Leftovers ^ on Nachos
+ Saturday: Out for the day
+ Sunday: Pan Fried Fish + Veggies

Breakfasts: Bran flakes, Bagels or Toast. Lunches (for me only): Tuna/Egg Salad or a Smoothie

In 2014 my husband & I downsized our home to speed up our quest for Financial Freedom. We swapped our large three bed house, for a small two bed apartment to clear our mortgage and give us enough budget freedom to travel and still save for the future. Our dream, after achieving Financial Freedom, is to spend part of every year living abroad.

    Looks great! We’re planning on a favorite baked chicken dish and baked mac & cheese, among other dishes. Both are pretty rich, so we temper that with bitter greens. Do you make your own naan? I’ve tried and not been happy with my efforts so am always curious if others have been successful.

  3. Well, tonight was breakfast for dinner and we had english muffins with eggs, bacon and cheese. Not too exciting, but definitely yummy!

    I really have to get back to some sort of menu planning, life is so much easier when I do.
