I’m starting with a fairly empty fridge this morning – milk, butter, cheese and the usual condiments is all we have – so menu planning is being done with a view to buying a little grocery tomorrow!

In 2014 my husband & I downsized our home to speed up our quest for Financial Freedom. We swapped our large three bed house, for a small two bed apartment to clear our mortgage and give us enough budget freedom to travel and still save for the future. Our dream, after achieving Financial Freedom, is to spend part of every year living abroad.

  3. We have a similarly empty fridge. We’ve been eating breakfast burritos and chicken burritos every day for a week! Time to go shopping.

    Ooh, mushroom omelets sound tasty. Our fridge is actually pretty full right now. I’m planning to roast a whole chicken tomorrow (and maybe make stock from the carcass). Thursdays are our tough day — my wife gets off work, has an hour for dinner, and goes straight to grad school — so we’ll probably do something quick an easy like pizza. Friday we’ll use some of Wednesday’s leftover chicken to make chicken and mushroom quesadillas.

      Monday’s are like that for us – my husband has a language lesson in the evenings. I nearly always eat soup on Mondays! It sounds like your getting the most out of that chicken :)

    I am just on my way to the kitchen to make the Mushroom Stroganoff on my menu plan to use the excess of mushrooms I bought cheap! Having a plan does mean you can see if you are eating a varied menu – yours looks exceptionally well planned and varied. If I ate meat I would be tempted to follow along with your plan!
