Monday and time for my menu plan. Hubby is away until Wednesday so I’m not planning too much in for today and tomorrow. My two children will be home at differing times tonight so I’ve made a quiche, which they can eat cold when they get home, and then tomorrow it’s eggs again, this time scrambled! All nice and easy.

Monday: Quiche, Potato Salad and Salad
Tuesday: Scrambled Eggs on Seeded Bread
Wednesday: Beef Bourginon with Vegetables
Thursday: Vegetable Pizza and Homemade Wedges
Friday: Spaghetti and Tomato Sauce with Ciabatta
Saturday: Chicken Fajitas
Sunday: Roast Beef, Yorkshire Pudding and Vegetables

In 2014 my husband & I downsized our home to speed up our quest for Financial Freedom. We swapped our large three bed house, for a small two bed apartment to clear our mortgage and give us enough budget freedom to travel and still save for the future. Our dream, after achieving Financial Freedom, is to spend part of every year living abroad.

    that is a great menu – ours is a pretty simple one this week as I want to use up stuff in the pantry/freezer… dd is so picky that it helps my grocery budget!

    Eggs are like a magical food – there are so many things you can do with them! I like them hard-boiled in my spinach salad and I love to create new omlettes with interesting ingredients (usually whatever’s left over!)

    Eggs are great! Their could be a Forrest Gump montage about them instead of shrimp.

  4. Eggs are great! They were on sale this week so I bought a bunch. I haven’t had Yorkshire Pudding in years! My mom used to make it for us when we were kids. The recipe doesn’t seem too difficult. I’d love to try it but we just started the Atkins diet, so flour is out! Oh well, I’m going to print it off to try later on when we can eat flour again :) Thanks
